I'm awake right now...watching it ferment...watching the bubbles...listening for the sound of sugar and juice churning...watching the bubbles...waiting for December...Wonder if it's too early to test yet? Good to know that with all the world's technology, you can't speed this stuff up without adding some kind of poisonous chemical.
